Cannon Beach Breakfast Treat: Danish Apple-Coconut Coffee Cake

A sweet vacation day starts with a sweet morning treat! One of our favorite breakfast treats is this Danish Apple-Coconut Coffee Cake. It’s simple to make and pairs wonderfully with a fresh morning cup of coffee.

Danish Apple-Coconut Coffee Cake Ingredients

  • ¾ cup butter
  • 1 cup sugar
  • 3 eggs
  • 1 ½ cups sifted flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup milk
  • 1 ¼ cups shredded coconut
  • 2 large tart apples, coarsely grated
  • ¼ cup sliced almonds
  • 2 tablespoons sugar
Preheat over to 250 degrees.

Cream butter and sugar until light and fluffy. Add eggs and blend well. Sift flour, baking powder and salt together. Add to egg mixture alternately with the milk. Mix only until smooth. Fold in coconut and apples.

Pour into well-greased 9x13-inch pan. Sprinkle almonds and 2 tablespoons of sugar on top. Bake for 25-30 minutes or until top springs back when lightly touched. This recipe makes 12 servings.
