A Taste of the Pacific Northwest: Filet of Sole with Shrimp

Nothing says coastal cuisine quite like a freshly prepared seafood feast, and that’s just what our delicious Filet of Sole with Shrimp recipe delivers. This mouthwatering dish is one of our favorites and is so simple to prepare! Filet of Sole with Shrimp Ingredients

  • 2 pounds Dover or Petrale sole
  • 1 pound salad shrimp
  • 1 small can sliced black olives
  • ½ cup finely chopped green onions
  • ½ cup finely chopped celery
  • ¼ cup lemon juice
  • 2 tablespoons dill (or more to taste)
  • Salt and pepper
  • 1 cup finely shredded cheddar cheese
Toss shrimp, olives, green onions, celery, lemon juice, dill, and salt and pepper in a bowl and let sit while fish is cooked.

Lightly dredge fish in mixture of flour, paprika, granulated garlic, salt and pepper.

Heat pan to medium heat. Melt 4 tablespoons unsalted butter and 4 tablespoons olive oil. Cook fish, browning on both sides.

Remove fish to platter and cover with foil to keep warm.

Toss shrimp mixture in pan to warm – don’t overcook. When warm, pour over top of fish. Sprinkle cheese over shrimp mixture (heat will melt it). Serve immediately. Makes 6 servings.

*Family Secret: It’s also good if you use ½ pound crab and ½ pound shrimp.
